Ingredients

  • 8 ounces ditalini pasta uncooked
  • 1/2 red bell pepper diced
  • 3/4 cup chopped celery
  • 1 small red onion diced
  • 1 1/2 cups cooked and shredded chicken breast
  • 1 cup low-fat mayonnaise
  • 1/2 cup plain Greek yogurt
  • 1 1/2 tablespoons Dijon mustard
  • 2 1/2 tablespoons fresh lemon juice
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley chopped, for garnish

Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Drain the pasta and rinse with cold water to stop the cooking process.
